Maitake

Also known as Hen of the Woods, this mushroom is one of my personal culinary favorites. The flavor can be described as earthy and rich with a hint of black pepper. 

Maitake is very versatile and goes well in any dish. It is popular tempura style, pan fried and deep fried. Makes for a very impressive meat substitute.
